Saemidori translates as "Transparent", named after the very fragile leaves that let a lot of light through. The name itself corresponds to its taste characteristics - a light and delicate tea, which is often used for high-quality matcha and gyokuro.

Saemidori is another type of tea grown in Japan. This variety was created in 1966 at the Shizuoka Tea Plantation by combining the genetic material of various tea varieties, including Yabukita, Shizu-Inzatsu 131, and Zaoshun. The result of crossing was a tea variety with light green leaves and a bright fruity aroma.
The word "Saemidori" consists of two Japanese words: "sae" means "clear" or "pure" and "midori" means "green". This type of tea stands out for its bright green color and pleasant aroma.
The Saemidori variety is considered one of the most popular varieties of tea in Japan. It is grown in Shizuoka province on plantations located on mountain slopes at an altitude of about 200-600 meters above sea level. Because this variety tends to increase yields at lower temperatures, it is usually harvested in the spring or fall.
Saemidori has an exquisite aroma and a sweet, mild taste. This type of tea is popular not only in Japan, but also in other countries, where it is considered elegant, light and refreshing.

How to prepare Saemidori matcha?
Matcha tea. Usucha:
1. Heat the chavan and chasen with warm water, but not boiling water
2. Wipe the bowl dry
3. Sieve 1.5 g of matcha through a sieve so that there are no lumps
4. Add 90g of 80°C / 176°F water
5. Beat for 40 seconds with active W-like movements.
6. At the end, slow down while popping the big bubbles
7. Enjoy, feel free to sip
Or a matcha latte:
1. Sift 2 g of matcha through a sieve to avoid lumps
2. Add 30g of 80°C / 176°F water
3. Beat for 40 seconds with active movements resembling a W.
4. Use warm or cold milk, add to dishes and mix with ready-made matcha
5. If desired, you can add maple syrup, honey or collagen
6. Enjoy
