How to properly store matcha?

Let's start with the fact that it is not necessary to store matcha in the refrigerator , but it is necessary - in a dark, cool place without access to sunlight and excessive heat.

We would recommend storing it in the refrigerator before opening, but after opening - we advise you to simply avoid frequent temperature changes, and most importantly - condensation.

Tip number one: If you do store matcha and other Japanese teas in the refrigerator, we advise you not to open them for at least 15 minutes after taking them out of the refrigerator to avoid condensation getting into the tea.

Tip number two: Matcha also doesn't like too much air contact, so avoid it.

  • Do not leave the package open (especially in the refrigerator)
  • Avoid contact with strongly aromatic products, because tea can absorb the smell
  • It is better to store tea in special vacuum containers or soft bags with a zip lock
  • Before closing, try to "squeeze" the air out of the package to minimize contact

Tip number three: Avoid contact with light.
After all, it destroys chlorophyll and the matcha becomes pale and dry. Therefore, we do not recommend storing in transparent containers or leaving the package open for a long time.

Tip number four: always fresh tea, consumed within 21 days after opening.
Calculate your strength correctly and consume the product with respect. It is better to choose a smaller size tea such as Yabukita 30g for 15-20 servings, Okumidori 40g and Tsuyuhikari 40g for 20-25 servings and consume fresh tea, with the maximum taste and aroma indicators and the best properties, than to buy a larger package and torture yourself for several months :)

Bonus tip: If you rarely use matcha, it is better to store it in the refrigerator. But if you use it very rarely, then it is better to store it in the refrigerator, and sometimes even try it from the freezer and do not forget the rule about condensation :)

However, the main storage condition: use the tea as soon as possible after opening. The key to the taste of Japanese matcha tea is freshness.




Shelf life of quality matcha:

— Try to consume your matcha within two weeks of opening the package or jar of tea. After the second week, the tea loses its main taste and aroma indicators, so the matcha is packed in special food jars designed for better storage and an optimal period of use.

However, the tea does not spoil after two weeks, so it cannot be consumed. Of course, it will change its characteristics, so we always advise you to choose
optimal sizes of tea.

What is fresh matcha?

This year's crop is considered a good matcha. It does not imply that the older Japanese tea is, the better it is, on the contrary. Freshness is value.

We do not advise you to choose last year's match, and especially the year before last.

It is also important to take into account that freshness also depends on the moment of grinding. Matcha can be considered fresh for six months. Therefore, be careful when buying matcha in a supermarket or marketplace, the date of grinding must be indicated.

Especially take into account that if there is no Japanese marking on the package, then the matcha has been repackaged and the 21-day freshness rule has expired from the moment of repackaging. Therefore, we advise you to buy matcha in the original Japanese packaging.
